Equinox is a sketch of the Appalachian duality, from domesticated crops to wildcrafted foodstuffs. It speaks to the interaction between humans and the environment, and the defining interim between to two. Deeper Dive Equinox takes a note from the traditional French Gentiane aperitif. Our gentiane recreates a historically alpine profile with botanicals endemic to the mid Atlantic. Starting with a base of hybrid grapes,
